Sakthi Masala Chicken Kulambu

Ingredients:
Chicken 250 g
Big onion 1
Small onion - one handsful
Tomato - 3 medium sized
Ginger - one inch piece
Garlic 5-6 nos.
Fennel seeds - one tsp
Clove - 2 nos
Kalpasi - a few
Bay leaf -1
Cinnamon  - a small piece
Sakthi Chicken Masala - 3 tbsp
Kashmiri chilli powder- 1 tbsp
Curry leaves - a few (chopped)
Coriander leaves - a few (finely chopped)
Gingelly oil - use generously

Method:
Lets make a paste for kulambu as follows:

Heat 2 tbsp of gingelly oil in a deep wide pan and add fennel seeds, kalpasi and clove.

As they get fried, add handsful of small onion ginger and garlic pieces and saute well.

Once the onions become golden brown add two finely chopped tomatoes and saute till they become mushy.

Add poppy seeds at last and give a final stir.

Turnoff, and grind them in to a fine paste after it get cooled.

To make kulambu:

Now in the same pan, add two to three tbsp of gingelly oil and add few fennel seeds,  bay leaf and cinnamon.

Fry them a little and add finely chopped big onion.

Saute them well till the onion become a golden brown in colour.

Add salt and turmeric powder.

Now add the chicken pieces and saute them well for two to three minutes till the chicken blends in oil.

Add the remaining tomatoes (finely chopped)and saute till it becomes mushy.

Now add the grounded paste and saute for five minutes in medium flame.

Add chilli powder and Sakthi Chicken masala and mix well.

Add required amount of water (11/2 cup approx)

Check for salt and allow them to boil in low flame for atleast 15 minutes.

Add curry leaves and finely chopped coriander leaves.

Once the oil separates, check if the chicken is cooked well and switch off the flame.

Now the tasty Sakthi Masala Chicken Kulambu is ready. 

Enjoy it with hot rice for lunch or as a gravy for idli dosa or chapathi.
